Click the "add" button (looks like a + symbol in the corner) chose album from the pop up menu, type a name for your album and click create. The album will be created and you are ready to put pictures in. Hope this helps!

Under My Documents/My Pictures create/name separate folders for your photos and put your pictures where you like. When you open photos on the Touch you’ll see each album (folder) listed and clicking on any one of them will show all the photos you put in there. For some strange reason, it keeps an album that contains all the photos – I’m not sure this is duplication, maybe just a link. !
